Equipment

  • Large resealable plastic bag or shallow dish for marinating
  • Grill or grill pan
  • Tongs
  • Sharp knife
  • Cutting Board
  • Small whisk or spoon for mixing marinade

Ingredients

  • 2.5 lbs 1.1 kg beef steak (sirloin, flank, or ribeye work well)
  • 5 cloves garlic minced
  • ½ cup olive oil
  • ¼ cup soy sauce
  • ¼ cup freshly squeezed lime juice about 2 limes
  • ¼ cup red wine vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons fresh parsley finely chopped
  • 1 tablespoon fresh oregano finely chopped (or 1 tsp dried)
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground black pepper
  • 1 teaspoon salt
  • ½ teaspoon red pepper flakes optional for heat

Instructions

  • Prepare the marinade:
In a medium bowl, whisk together the garlic, olive oil, soy sauce, lime juice, red wine vinegar, Worcestershire sauce, parsley, oregano, smoked paprika, black pepper, salt, and red pepper flakes (if using).
  • Marinate the steak:
Place the steak in a large resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it’s fully coated. Seal or cover, then refrigerate for at least 4 hours (overnight for best results).
  • Preheat the grill:
Remove the steak from the fridge 30 minutes before cooking to bring it to room temperature. Preheat your grill or grill pan to high heat.
  • Grill the steak:
Remove the steak from the marinade, letting the excess drip off. Place on the hot grill and cook for 4–6 minutes per side for medium-rare, adjusting for desired doneness.
  • Rest and slice:
Transfer the steak to a cutting board and let it rest for 5–10 minutes. Slice thinly against the grain to ensure tenderness.
  • Serve:
Serve immediately with your choice of Brazilian-inspired sides like rice, farofa, or a fresh green salad.

Notes

  • Marinating time: Let the steak marinate overnight for the richest flavor.
  • Grill heat: Ensure your grill is very hot to sear the steak properly and lock in juices.
  • Resting is key: Allow the steak to rest before slicing to keep it juicy and flavorful.
  • Herb swaps: Try using cilantro instead of parsley and oregano for a citrus-forward twist.
